1/2 c sifted unsweetened cocoa | 1 cup boiling water |
2 1/4 cup sifted all-purpose flour | 1/2 tsp baking soda |
1/2 tsp salt | 1 tsp baking powder |
1/2 cup softened margarine or butter | 2 cups sugar |
2 eggs | 1 tsp vanilla |
1/2 cup butttermilk or sour milk | |
Preheat oven to 350 degrees. Combine cocoa and boiling water and let cool. Grease and flour 2 8 1/2" cake pans or 13x9x2" baking pan. Sift soda, powder and salt and set aside. In a large bowl on high speed, blend butter, sugar, eggs and vanilla for about 5 mins. NOTE: You can't just throw all of this in and mix like you would any other cake. You must follow the instructions below in order for this cake to turn out properly. On low speed: blend in flour mixture in fourths. Alternately with butter mixture in thirds. Begin and end with flour mixture. Blend just until smooth. Pour batter into pans. Bake 30 mins or 35 mins for oblong pan. Cool 10 mins and take out. Sour milk = 1 1/2 tsp lemon juice and fill with milk to make 1/2 cup. Let curdle. |
